France foodservice market analysis
The overall value of the French profit sector fell during 2015 –2020. The significant drop in the number of transactions was instrumental in this contraction. However, the decline in the number of outlets was modest thanks to the addition of new outlets by chain operators, which helped to nullify the fall in the number of independent outlets. The travel channel was among the worst hit, as travel restrictions had a major impact on foodservice demand in the channel. The pub, club & bar channel also suffered, as more stringent regulations on nightclubs hampered sales. In the coming years, the profit sector will grow at a significant rate, driven by chain operators. Dark kitchens will play a more prominent role in the industry.
Dine-in market
Dine-ins make up the majority of sales in all four channels. Out of these channels, the QSR channel derives the largest share of sales from take-aways. During 2020–2025, dine-ins will grow at higher rates than take-aways in the QSR and FSR channels, following a steep decline in dine-in sales in 2020.
With dine-ins restricted, consumers depended on take-aways, from which restaurants looked to salvage at least a part of their losses. However, as the pandemic situation subsides in the coming years, consumers are expected to prefer dining in.
Consumers who visit FSR outlets, especially fine-dining restaurants, generally seek a high quality of food and drink. However, since the outbreak of COVID-19, consumers in every income group have become more price-sensitive, with many visitors unlikely to return to an establishment deemed not to offer good value for money. Value sales will grow at significant rates in every foodservice channel. This will be driven by the release of pent-up demand from 2020 when lockdown measures stopped consumers from dining out.
Dine-in: To eat a meal on the premises of a foodservice operator, away from home, as in a hotel, restaurant, or any foodservice outlet.
